Eastern BBQ Chicken Drumsticks with Trukai Jasmine Rice, Mixed Beans Salad & Broccoli
Ingredients:
- 200g Trukai Jasmine Rice
- 600g Water
- Oil
- 1g Salt
- 1g Pepper
- 100g Red Kidney Beans
- 80g Chickpeas
- 80g Green Lentils
- 50g Parsley (finely chopped)
- 200g Paprika Powder
- 20g Cumin Powder
- 20g Coriander Powder
- 10g Aupa Powder
- 10g Cajun Spice
- 80g Broccoli (cut up)
- 80g Cauliflower (cut up)
- Onions (diced)
- Garlic (diced)
- Garlic (diced)
Preparation:
- Prepare your Trukai Jasmine Rice. Wash Trukai Jasmine Rice 3 times and cook in 600g water with a pinch of salt until fluffy. Serve into a bowl once cooked and set aside.
- Prepare Chicken: Season chicken drumsticks with paprika, cumin, coriander, aupa powder, and cajun spice. Grill or bake until cooked through.
- Make Bean Salad:
- Add pan on heat
- Add oil to pan
- Add onion, ginger and garlic to hot pan. Sauté until gold.
- Add Chickpea and stir. Then add in broccoli and cauliflower
- Add in spices (Paprika, Cajun) mix together and add in Green Lentils and Red Kidney Beans.
- Mix together
- Add Trukai Jasmine Rice and combine together.
- Season to taste with Salt and Pepper.
- Plate rice into a platter of your choice and garnish with drumsticks and coriander.
