INGREDIENTS:
- 4 cups Trukai Jasmine Rice
- 1/4 cup sweet chilli sauce
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 1 clove garlic, finely grated
- 4 ounces chicken breast, cut into strips
- 2 large carrots, grated
- 1 cup broccoli florets
- 1 red capsicum, coarsely chopped
- 1/4 cup vegetable oil
- 1 large egg
- Toasted sesame seeds for garnish
- 4 spring onions, thinly sliced on the bias
PREPARATION:
1. Wash Trukai Jasmine Rice 3x, cook until fluffy, and set aside.
2. Preheat the oven to 500°F.
3. Whisk together sweet chilli sauce, soy sauce, sesame oil, and garlic in a small bowl.
4. Mix 3 tablespoons of the sauce with the chicken strips until coated.
5. Toss 1 tablespoon of the sauce with carrots, broccoli, and capsicum.
6. Heat vegetable oil in a cast-iron skillet and press cooked rice down to form a crispy base.
7. Drizzle 1 tablespoon of the sauce mixture over the rice and spread evenly.
8. Layer the veggie mix and place chicken strips evenly on top.
9. Heat on high for 6 minutes, then transfer to the oven and bake for 8-10 minutes until chicken browns.
10. Crack the egg in the center and return to the oven until the egg sets (5-6 minutes).
11. Let it cool for 10 minutes. Sprinkle spring onions and toasted sesame seeds on top.
