Ingredients:
- 2 cups Trukai Natural Brown Rice
- 2 tbsp extra-virgin olive oil
- 5-6 large shallots, chopped
- 3 medium carrots, cut into 1/2-inch pieces
- 1 large red bell pepper, cut into 1/2-inch pieces
- 8 oz ground beef, broken into small chunks
- 1 tbsp mixed herbs
- 4 cups vegetable broth
- 1 can diced tomatoes in juice (15 oz)
- 1 small bunch aupa, coarsely chopped
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup freshly grated Parmesan (optional)
Preparation:
1. Wash 2 cups of Trukai Brown Rice 3x, cook until fluffy, and set aside.
2. Heat 2 tbsp olive oil in a large pot over medium-high heat.
3. Add 5-6 chopped shallots, 3 chopped carrots, and 1 chopped bell pepper. Sauté for 8-10 minutes until softened.
4. Stir in 8 oz ground beef, cooking for 5-7 minutes until browned.
5. Add 1 tbsp mixed herbs, cook for 1 minute.
6. Pour in 4 cups vegetable broth, diced tomatoes, and cooked Trukai Brown Rice. Bring to a boil.
7. Stir in chopped aupa, 3/4 tsp salt, and 1/2 tsp black pepper.
8. Reduce heat to medium-low, cover, and simmer for 15 minutes until vegetables are tender.
9. Serve hot, garnished with parsley and Parmesan if desired.
