Market Fish with Ginger Garlic Coconut Rice
Ingredients:
Banana leaf Market fish
- Fish (market fish) mackerel, snapper, trevally cut into bite size pieces
- 1g ginger (1 small knob) chopped
- 10pcs cherry tomato
- 2 whole onions (thinly sliced)
- 1 (bunch) spring onion
- Salt (pinch)
- 2g pepper cracked
Ginger Garlic Coconut Rice
- 300g medium rice (washed and drained)
- 950g coconut milk
- 4g Salt (pinch)
- 4pcs Garlic (diced)
- 4g Ginger (diced)
To cook the banana leaf wrapped fish:
- Place your fish pieces on a tray
- Season them with salt n pepper
- Place a handful of pieces onto banana leaves.
- Place 2 pcs of cherry tomatoes, sliced onions, ginger, spring onion on top of the fish
- Drizzle with oil and proceed to wrap the banana leaf parcels
- Once wrapped, place them into a pot of boiling water and cook for 5 - 10 minutes (depending on the size of the the fish pieces)
To cook the rice:
- Take a pot and place it on the heat. Add oil and begin to cook the garlic ginger and salt.
- Once sautéed off add rice and begin to sauté
- Add the coconut milk to the rice, place the lid on and begin to simmer
- This will take roughly 20 to 25 mins
