Lemon Honey Chicken with Egg Fried Rice
Ingredients
Fried Rice
- 520g Rice (cooked)
- 100g Soy Sauce
- 1 whole onion (small diced)
- 10g Garlic (chopped)
- 10g Ginger (chopped)
- 100g Carrots (carrots dice)
- 1 bunch Spring Onion (thinly sliced)
- Sesame toasted seeds
- 6 eggs
Lemon Honey Chicken
- 10pcs chicken thighs (diced)
- 100g honey
- 450ml Soy sauce
- 1 lemon zest and juice
- (Substitute for lime. Make sure to adjust with honey)
- Jasmine rice
- 300g rice (washed and rinsed)
- 950g water
- 4g Salt (pinch)
- 1 Lemon juice and zest
Method
To make the Trukai Jasmine Rice
- Wash the rice and drain.
- Place rice in a small pot. Add water and salt. Cover with a lid and bring to boil. Once the rice comes up to boil turn down to low simmer and cook for approximately 17min. Larger portions will take longer to cook.
- Once cooked and water is absorbed, remove from heat and keep covered with lid for 5 min. This will steam the rice and dry out. Take fork and run through the rice to fluff the rice.
To make the Fried Rice:
- Put a clean pan back on the stove and add some oil. Once hot add whisked eggs and begin to cook the eggs. Once its scrambled take out of the pan and set aside.
- Wash the pan and place back on the heat. Pour some oil into the pan and get hot. Once hot, sauté off the onion garlic, carrot and ginger. Add the cooked rice and begin to fry off for 1 min. Add the soy sauce and mix.
- Add the cooked eggs to the rice and mix thoroughly. Once mixed properly, set aside and garnish with spring onions and sesame seeds.
To make the Lemon Honey Chicken
- Take the chicken and dice into small cubes. Marinate the chicken in the honey, soy sauce and cracker pepper. Add lemon zest. Mix properly and let it rest in the fridge approx 20 min. (You can marinate in the fridge overnight, this will allow for a more intense flavor)
- Place a pan on the stove and begin to get the pan hot. Add some oil. Once oil is hot carefully add the chicken to the pan and begin to stir fry at high heat.
- Once cooked add the lemon juice to the chicken.
Set aside and serve with rice.
